Welp, so should I stick with 8 for a while or try out 10?

I would try 10 (it was very easy to switch back to 7 and so I think it is easy to switch back to 8 - only in case you have trouble with 10).

I think that 10 is better than 8

I am a new user, attempted to install this on windows 10. keep getting script errors despite my attempts to fix it. Most answers from older forums said to rollback internet explorer but internet explorer doesnt exist anymore, and I can't downgrade to it. I would wait before getting windows 10 if i were you

Many people have got it working on W10. What kind of script errors you get? Post some screenshots.

Did you use the new interface which doesn't require unblocking?

Copy to your NHL 2004 installation folder, run the EXE and overwrite everything.

Just don't install it to \Program Files folder, use something like D:\NHL 2004 and you should be fine.
